i hate bosses
i dont think they are a challenge or a goal or a puzzle
i tend to think they are a obnoxious block in my progress to finish a game and are only there to artificially increase the life span of a game and i hate them utterly

Pretty much anything from any of the Megaman games - most notably Dr Wily's Alien form from Megaman 2 along with the Yellow Devil boss fight from the first fortress stage in the original Megaman.
The Starwolf boss battles were always my favourite part of Starfox 64, especially the battle which took place on Venom with their enhanced ships.
Garuda on Street Fighter EX+@ was refreshing. A nice tough boss character on a Street Fighter game that wasn't either Akuma or Bison.
Geese Howard in any Fatal Fury game he appeared in. I just liked his character design, moves set and music. Plus he felt like the most "fair" of SNK's bosses!
Metal Sonic in Stardust Speedway if that counts. Rather than a straight up battle against him you had to race him instead which I've always liked. That and the great music that accompanied it.
I quite liked the second boss from Splatterhouse on the PC Engine - the Poltergeist. Just the fact that it felt like a different type of boss battle compared to the norm.

Good boss fights are what make a game for me! Axelay contains 5 awesome bosses, I'm not counting the final one becuase its a sh1tbag.
Shadow of the Colossus should have been the best game ever, but the horse riding was stupid and broken and infuriating.
recently I quite liked the omega supreme one in War for Cybertron. The PS2 transformers game has some good ones too.

Ganondorf/Ganon at the end of Ocarina of Time. The first time a boss battle took my breath away and really meant something!

Level 5 Burning Boss - Axelay boss
All of the bosses in Axelay screamed quality, but the lava boss was something else. Still one of the most amazing bosses in all of the 16bit era, if a little on the easy side.
