Batman Returns for me, both the Snes version which I played sooooooo much, and the Mega CD version which I 1st played last year.
Both are excellent game imo.
I do like Batman the Movie too, on the C64 and Amiga, but my crap skills let me down and I rarely make it out of the Axxis chemical factory. I hadn't played either of these until earlier this year either.

I'm going with the unpopular choice of Batman: The Caped Crusader. I just loved the comic book feel, eventhough the way Batman moved was a bit "wooden". I remember making it to the end of the Joker level, & there was Robin tied to the roller coaster, but I didn't know what to do from there. This was a good 15 odd years ago now, dunno if I could get that far again. I remember the Joker stage being VERY hard!!
I'd love to see a remake of this game. As for Lego Batman... I LOVED Lego Star Wars, so bring it on!!
EDIT: Oh, & I remember the Amstrad version had music on the title screen that sounded more like the Spiderman theme than the Batman theme... at the start of it anyway...
