Some of the Tomb Raider's are still great to play, despite the controls being clunky as hell compared to now. Not sure if anyone remembers it, but Intelligent Cube is still good to play, too.

I can honestly say that old PS1-style 3D doesn't bother me at all. It might sound cliched but it's all in the gameplay as far as I'm concerned.
Retro is a state of mind, and cares not for your puny concepts like dates and calendars.

Main problem I find are the camera and controls before the twin stick arrangement became standard. One of the worst "twin stick" games on the PS1 would've been Delta Force : Urban Warfare. Controls on that were so bad on Analogue that it was near-impossible to play - and you couldn't toggle the analogue off. To play without the analogue you had to plug in the older digital pad, and then the entire control scheme changed to something that was much more intuitive - but due to the lack of analogue, worse for FPS games.

The 2D games still look great and there are still 3D games that look good - though it all comes down to taste.
RType Delta looks great despite the decision to use polys for a fake 3D look. They look a bit on the rough side at times but the graphical design is solid and the old PS1 throws them around with gay abandon.
Kurushi and Kurishi Final look well because of the timeless design.
RIdge Racer 4 and Wipeout 3 SE still look nice.
Am a fan of the Q*Bert remake too - looks and sounds quite nice.
Some 2D games...
In The Hunt has a Metal Slug-esque look to it which is great.
One Piece Mansion is stylish looking puzzle game.

Forgot about Power Diggerz - great little game. Great control scheme using every button on the pad while at the same time feeling natural.
Landmaker and Puchi Carat are excellent too. The PS1 version of Puchi Carat has lots of extra modes and so is far better than the Taito Legends version which is just a straight arcade port. The PS1 version also comes with a paddle controller.
Ps1 is also no slouch at 2D shooters and can at times match and improve upon the Saturn versions. I've read its versions of In The Hunt and Strikers 1945 2 are better. It's version of DoDonPachi is supposed to be smoother too though it does have some limitations around ship selection.

Einhander is fantastic. Shame square decided to not do another or branch out in to more different genres. Probably down to sales I'm guessing.

Scars (Ubisoft) is still cool, as Alundra 2 too 
But the PS1 game that I really prefered and is still ok is Crash Team Racing!
