Any order is fine as it is difficult. I may even switch if I have forgotten any but at the top of my head:

Final Fantasy 7
Final Fantasy 9
Resident Evil 2
Gran Turismo
Grand Theft Auto

Tekken 3
Metal Gear Solid

I think you're going to see a lot of the same franchises, but with the oportunity to look back now, the versions might differ. I'm hard-pressed to decide between the great graphics, depth and side-games of Tekken 3 compared to the simple fun of the original. And Wipeout 3 SE was a great compilation of all the best tracks of the 3 main games with the latest game engine, but was it the best? Well, yes, probably was actually...

Tekken - still fun, before it got crazily complicated
Rage Racer - perfect balance of racing and upgrading, just let down by the simple drift model not coping with hairpins.
Tempest X3 - trippy as
Disruptor - an FPS that comes in colours other than brown!
Colony Wars - Whee! Pew pew!

Though I'll admit now I've never played Ape Escape or Rival Schools...

Parasite Eve 1
Rapid Reload Gunstar Heroes for the 32 bits
Hot Blood Family it's a scrolling beat up so automatically good in my eyes
Sudukion 1 finished this a few times
Resident Evil 3 the best Resident Evil

Played Adventures of Little Ralph recently and enjoyed that
