This has been done before here

Tetris (Gameboy) - this happens to be a big favourite of mine!
Roland in Time (Amstrad CPC) - inspired by my favourite TV program.
Street Fighter II (Arcade) - I love the Ken stage and Chun-Li stage music!
Mortal Kombat II (Arcade) - the main theme is superb and pretty dark!
Rainbow Islands (Arcade) - funnily enough, this is a cover of an old song "Somewhere Over The Rainbow!" but it doesn't sound like it initially - you have to really listen to it.
Rez (PS2) - work of genius

& finally

Need For Speed - Road Challenge (PS2 & PC) - brilliant, varied and complements the game no end!

Ricky Carmichael Motocross (PS1),
Agressive Inline (PS2).

Outrun & Outrun 2 (Arcade/Xbox)

Zoids (C64)

Wizball (C64)

New Zealand Story (Arcade/Amiga)

Puzzle Bobble...or Bust-a-move or whatever..you know? The Neo-Geo one where something goes 'ner ne ner ner ne ner'

Oooh Flying Shark (Arcade)

Turbo Boat Simulator (Amstrad CPC) Seriously, one of those ones you'd just load for the music on the title screen.

Nights into Dreams (Saturn) I thought was great...

..and..um oh yeah MSR on the Dreamcast, I don't know why...I just like it, reminds me of the Summer of 2001 or something. Oh and by the same guy, the soundtrack to Headhunter on the Dreamcast.

I'm just greedy.

Any Tecnosoft game ever.

And Jet Set Radio Future's intro track which was the best statement about gaming ever even if it was by accident.

Yep. Thunderforce IV in particular.

I would like to also present to the jury any Katamari game, Auf Wiedersehen Monty on the 128K, Rez, Zelda: Link to the Past, Fable, SoR2, and the Daddy of them all, Final Fantasy 7. Oh, and Ico and Shadow of the Colossus were pretty damn fine too.

I can quite happily listen to virtually any Sid tune , Combat School and Mikie being particular favourites

Warhawk on 800xl was good (better even than C64 sid!) , liked the tunes from Pirates! on Amiga and Foundations Waste on ST

One of the worst has to be Burger Time - I could happily never hear that.'tune' again , am I right fellow retro-leaguers?

There was a lot pretty cool soundtracks on the 3DO, obviously thanks to its new-fangled CD-thing.

Novastorm (scavenger 4) was a pretty special sound track. Very 'techno' sound track.

Lost Eden. A game by Cryo, the people who also made the original Dune game - both of which feature music by Stephane Picq. Some people say they feature the same music - they don't. Very french I would say. Very good as well.

Return Fire, also for the 3DO, had classic tracks. They were sort of fitting for the vehicle you were using. So the Jeep, if I remember rightly, used the William Tell overture, aka the Lone Ranger tune. The Helicopter used Ride of the Valkyries which I believe was the same as the helicopter sequence in Apocalypse now.

I'd also like to vote for Robocop on the speccy.

The 3DO Doom soundtrack was considered the best by some.

Wipeout had a soundtrack that was pretty good. :)

Don't you mean Final Fantasy VII? :D Some of the music in that is brilliant. I especially like the music in the caves after you've crossed the Midgar Marshes (don't bump into the Zolom! ). 8)

I absolutely "dig" the soundtrack to Virtua Fighter 2... I often put the Saturn disc in my CD player just to listen to the soundtrack! :D
GAME OVER YEEEAAAHHH!
