In The Sims Bustin Out on the N-Gage (but not on the GBA version) you can pick up an older Nokia mobile phone and find Snake and a couple of other older mobile phone games to play on it.

In Professor Layton and the Lost Specter there is a second game called London Life available from the main menu. Unfortunately it was dropped from the European version of the game.

Oh yes, one more. Pokemon Channel on the Gamecube has a Pokemon Mini handheld and games that can be bought and played in-game. I'm sure that I recall reading somewhere that the emulation code in that game was used as the basis for the Pokemon Mini emulator available now for the PC.

The Gamecube version of Fight Night Round 2 has a version of Super Punch Out to play.
There was a Test Drive game on the original Xbox where you could play Pong whilst the races load.
Final Fight StreetWise has the original Final Fight to be unlocked.
