Shinobi X is highly under-rated. I prefer it over Revenge of Shinobi (although not as good as Shinobi III).

Baku Baku's the best two-player game on that thing. And also House of the Dead.

Sonic Jam's just smashing, and then Sonic 3D and Earthworm Jim 2 are like "deluxe" versions of the cartridge games.

House of the dead on Saturn is bloody awful, mid level loading times, also that bloody white flash

Baku baku is bloody great fun in two player, it can get a bit competitive down the pub

its a censored poor conversion and doesnt do the saturn justice

Exhumed, one of the best FPSA games ever.
The square is a great shape, and one that is criminally underused in modern game design. In the push to ever more granular, chaotic environments, games have lost sight of the simple pleasures of right angles and straight lines.

Lots to like on the Saturn. Back in the day VF , VF2, and Fighters Megamix were great - but the newer versions are better.

Panzer Dragoon is a fun adventure shooter with a mysterious and interesting world. Great redbook audio too.
Panzer Dragoon Zwei improves just about everything over the original - more variety, better visuals. Music is more soundchip-based but still good.
Panzer Dragoon Saga is a multi-disc RPG version, it fleshes out the world. It is expensive now.

Racing games - Sega Rally Championship is the best and still challenging and lots of fun.

Saturn Bomberman is really awesome - both 1-player and multi-player! We had the multi-tap and would play 6-player games - up to 10-player games! Never gets old! Again, the 1-player game is also lots of fun.

NiGHTS into Dreams is very unique and special -but you can get an HD version on Xbox 360 that is a fine improved port.

I also enjoy the 2D platformers - Astal, Rayman, Three Dirty Dwarves (beat'em up).

2D shooters - Radiant Silvergun was an awesome shooter; also others but my memory is failing right now.

Hmm, I'd say...

Loaded - A fun top-down run'n gun with a quirky sence of humour.
Magic Carpet - A real and rare early attempt at a decent 3D open-world(ish) game.
Panzer Dragoon - A good on-rails 3D shooter.
Virtual Fighter 2 - The best early VF game IMO.
Resident Evil - The first version of what is arguably the best ever survival-horror series.
Wipeout - Just a nice to look at and very (re)playable racer, even for people who don't particularly like racng games.
Sega Rally - really was an enjoyable 'one more go' racing game, and that's rare for me.
Sonic Jam - You get to see a bit of the code developed for the very first droped 3D Sonic game plus all the origonal Megadrive releases as well as some history and other little extras.

But that's just me :D

My favs are Magic Carpet, Tomb Raider, Exhumed, the first 2 Panzer Dragoons, Nights Into Dreams,Sega Rally & Alien Trilogy

Steep Slope Sliders! Although if you have experienced SSX Tricky & SSX3 then it will of aged badly in your eyes.
