Question though - at around 1:12 there is a cool display of machines running Bubble Bobble. The second display looks like the speccy version but is that a ZX81 underneath?

Yes. The lineup is original Gameboy, ZX81, C64 and NES. Which is a bit weird if its showing Bubble Bobble systems.
Wonder if Pix n Love have anything on display? If nothing else they could have a good sales outlet at the museum shop.

Sounds like an interesting exhibition, I've always been more interested in the art direction in video games rather then the the whole 'videogames are art' debate. Has it never occured to anyone that 'games' (regardless of the medium employed) have been around since the beginning of humanity and have never had to justify there existence as art till now?

It's a ZX81, but something isn't quite right, there's something proud of the surface. I suspect it might have a FileSixty keyboard or similar.
