Hypersports in clay pigeon shooting when you get a perfect score they throw in a duck for a bonus!

I had totally forgotten about this game. Pretty good point-n-click.

also ps3 tech demo the ducks falling in the bath (i know it's not a game but i'm struggling here)

Operation Wofl - Isn't it a duck flying past that you can shoot for a health pickup?

I also think Back to the Future Part 3 on the Amiga had ducks in that awful gallery shooter stage.
