If you're able to play Super Bomberman 5, that is mad fun. But it's in Japanese.
Also Kirby's Dream Course.

Biker Mice from Mars and Micro Machines are good 2 player games if you like racers.

Mine prefers Bomberman 4 & isn't much of a fan of the new style graphics in 5. I prefer the 1 player aspect of 5 though. It's pretty good.

We don't ever seem to FINISH games. We're partway through Super Bomberman 4, Kirby's Dreamland 3, Secret of Mana & Street Gangs. Not sure why we can't seem to finish any...

I'll second Secret of Mana. Had luck with that game. That and Super Mario World of course.

SoM I recently considered too shallow in terms of gameplay to be a good game by modern standards. Having since played the ridiculously over-complicated prequel Sword of Mana, however, I've reassessed that and now think that Secret of Mana is just... accessible. So it'd be good as a casual gamers game, as long as they didn't mind the awful ring menu system.

Super Mario World is a much better bet than Yoshi's Island for g.f.s who are casual gamers. SMW will be familiar and instantly playable to anyone who's ever seen a Mario game, YI unfortunately I've found turns off casual gamers because of the more complicated control system. (I still regard Yoshi's Island as the superior game of the two, FWIW.)

I would've at one point recommended Legend of the Mystical Ninja too, but if my own experiences with my g.f. are generalisable, it's a bit too hectic in two-player. Still, might be worth a shot, if you already own the game.

Some I heven't seen mentioned yet:

Hebereke's Popoon and Heberke's Popoitto (popoon is a puyo-a-like, popoitto is a dr mario-a-like) Mad japanese visuals and music
Kirby's Dream Course - weird but clever crazy golf game
Out to Lunch - OK its a turn-based 2 player platformer - but this is cute as a button and has bags of charm.
Pop n Twinbee - great cute shmup with 2 player simultaneous
Tetris & Dr Mario - has an original mixed mode which is a split screen score attack playing Tetris B, then Dr Mario , the Tetris A until the timer runs out

This is gonna turn into a "what do you like to play with your girlfriend/boyfriend/mistress/partner/husband/wife/other half/lover/bit on the side/flat mate/work colleagues/stripogram/escort girl/guy" style thread isn't it?

Personally my missus loves to play Oblivion, Lego Star Wars, Streets of Rage 1-3, Golden Axe 1 & 3 and any Sonic game together!

You can never be too sure what girls will like. I have two sisters - my older one likes Street Fighter as well as the more traditional puzzlers (but I'm a huge fan of those too!), and my younger one likes driving games that allow you to pimp the cars.
