Well, the Star Wars game, Rogue Leader is superb. Still looks the business today.

Eternal Darkness is also brilliant. A good scary horror with lots of variety and a great story. Good replay value too.

What else... Doshin the Giant is a lovely strategy type game (that didn't get released in US).
Oh, and the Gamecube version of Burnout 2 is pretty much the best.

Some of these may be obvious to you but I'll post them anyways...

Pikmin 1 & 2
Super Monkey Ball (original on GC, best version there is)
Billy Hatcher & The Giant Egg
Eggo Mania
Paper Mario: 1000 Year Door
WarioWare Inc. Mega Party Games
Wave Race: Blue Storm
1080: Avalanche (well, I like it :P )
F-Zero GX
Viewtiful Joe 1 & 2
Killer 7
Soul Calibur 2 (featuring Link!)
Chibi Robo (if you can still find a copy anywhere)

You may like 'Geist' too, I thought it was better than the reviews made it out to be, quite a decent original game.

I really enjoyed Gotcha Force. Possibly a bit too manic and kidsy for some, but it's action packed. Great fun.

Wario World is a fun beat em up made by treasure. Not very long or hard but great while it lasts.
Resident Evil Remake, Zero and 4 are all excellent Survival horror games and are all worth playing.
Soul Calibur 2 and Super Smash Bros Melee if you like fighting games, both will take an age to unlock everything on offer.
P.N.03 is a brilliant and often overlooked corridor Shoot em up. Rock Solid in terms of difficulty though so watch out!
Megaman Network Transmission is worth considering, its a classic 2D Megaman style game based in the Battle Network series. Don't let the initial difficulty fool you, it gets much easier after the first 2 levels.

I got it cheap not long after it first came out, nobody else seemed interested in it. Considering it's a Sonic Team game, it's much better than any of the 3D Sonic games so it makes you wonder where they've gone wrong with Sonic.

It's easy for me to pick just 1 game - Eternal Darkness

I think it's my favourite GC game, it's got such a great horror script. I love the weird $hit that happens when your sanity meter is drained, genuinely unsettling
