The problem is all those series are variable. I have always hated Outrun, the first one just isn't playable, but Outrun 2/2006 are superb.
Same for Ridge. I'm still not fond of the first ones but Rage Racer and 6 were excellent.

Sega's Turbo. For so many years it hung on in there, turning up in every travelling fair or in a dark corner of a big arcade like an old friend waiting to greet me. Lovely little wheel for the controller, just the right level of responsiveness to make it tight and playable even against its newer, shinier brethren.
Of those you've given, I'll pick Ridge Racer though.

For the record I'd probably pick Outrun 2006. But I don't really want to vote for Outrun because that'll imply I actually like "Outrun".

It's gotta be Outrun for the sheer quality of the game and how it's stood the test of time. For good old 2+ player fun it's gotta be Daytona.
No Road Blasters on the list? Fair enough, it's not the greatest racer ever and not the same genre as the others, but i liked it.
