Harsh Question indeed.. I would have to go for Mortal Kombat II.. so much "win" with it's near perfect arcade conversion.
From Game&Watch to PS2 and Arcade in between, its been so much fun every single step of the way.

Tough one, Zelda or Mario Kart. Though have to say Mario Kart as it has almost infinite replay value esp with chums after the pub.
