Apparently you can do system transfer from old to new model, but you won't be able to transfer from new to old models.
Where did you get the can't transfer from new to old model information from?

Original arcade Shinobi because of the phenomenal level design (every non-boss stage is doable without firing a shuriken to get secret bonus) incredible music and that super cool bonus stage. Plus the scoreboard records how many credits you used so no cheaters!

Out Run (1986) always for me, then Powerdrift, Hot Chase and Virtua Racing. I prefer Sega Rally on Saturn to arcade personally.

I'm not certain you are listening to me properly - I do it without a PC. You plug in an external HD to the PS3. The PS3 has options to format it. Then you back up to the external FROM the PS3. Then you put in your new HD. You use the PS3 settings to format the new HD. Then you restore back from the...

You don't need to buy a second PS3, just upgrade the internal HD to a bigger one... then I would A need a pc and B would spend a day or 2 redownloading Or borrow/use an external HD to back up to, then you swap in your new one and transfer back onto the PS3 from the external. Yes but those games are multi-plats (sans for Zombi U), meaning they're not a reason to buy a Wii U. So what?
