I can't think of a text-based adventure that had a full point-and-click make-over but there was a fan remake of Kings Quest I that dropped the text parser in favour of the interface from the later KQ games. I played that through, I thought it was well done.

Laughably, Defender of the Crown on the first ST I ever saw. I think I was more impressed with the random access by being on disc which suggested that the games for the new-fangled 16 bit machines could come on loads of discs and be massive in scope - and of course we all know where that ended up......
