They could surely just use the pointer functionality of the right Joycon. It might not feel much like a gun, but it'll still work more or less the same as a Wiimote.

Failing that, maybe they'll do a Typing of the Dead remake for PC.

Both Skyrim and The Witcher III have irritating weapons degradation systems too, so be warned on that score. You can mod them out when playing on PC, but I don't think that's an option on the Switch.
